Pepper white Muntok whole

 

We know three main types of pepper from the same plant in various stages of ripeness: green, black and white.
White pepper corns are the ripe berries of the pepper tree.  After days of washing, the skin is removed to reveal the white corns. White pepper is less pungent and aromatic than black pepper. The quality of white pepper is determined by the number of dark berries present. Verstegen uses only the best quality by removing the dark berries: a process called  "positive picking"   This is how the best quality white pepper is achieved,  the " Verstegen Superior White Diamond". This pepper also has a very high litter weight (heavy berries) and a large percentage of volatile oils. This quality is used in all the main quality spicemixes of Verstegen.
