HACCP

Goal of HACCP

In the foodstuffs sector, hygiene is very important. After all, products which have gone off or become contaminated are a danger to our health! That is why we must guarantee good quality. This is done partly by means of an HACCP (Hazard Analysis Critical Control Points) system. HACCP means that all operations in a company relating to the product are checked for possible food safety and health risks for the consumer.

Required by law

In many countries of the world, the legislation regarding the safety and soundness of  foodstuffs requires that  'HACCP' is implemented by every company or every organisation in the foodstuffs sector, irrespective of whether the organisation is governed by private or public law and irrespective of the profitability.

According to Regulation (EC) No 852/2004 of the European Parliament and of the Council of 29 April 2004 on the hygiene of foodstuffs, all foodstuffs companies in the European Union must implement HACCP.

HACCP in practice

If there is evidence of a specific, critical risk, then we speak of a critical point (Critical Control Point) at this place in the company. In this case, a control measure is drafted. This reduces the chance of the risk occurring to a minimum. All operations referred to must be recorded as proof that HACCP has been implemented.

HACCP certification

Of course, a check is made as to whether the HACCP system has been introduced well and is working as it should. Only then is the HACCP system fully operational. It is important that the system is maintained. Verstegen therefore conducts regular internal audits.
The certifying agency and the Food and Consumer Product Safety Authority also hold periodic audits to check.

A certificate subject to change

The HACCP plan is not a one off, but must be amended continually. The composition of a product can change, the production process can change or other changes may occur related to safety guarantees...
